Lovely delicate aromas of zesty lime, crisp green apple, acacia flowers and hints of wet stone with a New Wave zing. The palate is deceptively mouth-filling, combining the dense savoury, almond meal flavours with livelier notes of green apple and mineral salinity. A fluffy texture smoothes out any edges before giving way to firmer phenolic structure on the long, youthfully austere finish.
The first notes reveal aromas of white flowers, pear, and blanched almonds. This is followed by a smooth, buttery mouthfeel, backed by a fine and rich mineral structure. Ideal with sashimi, oysters, seafood, white meats such as chicken and veal, and also with cheeses like Brie, Comté, and Camembert.
